A recipe which has given smiles, laughter, and love…not really the latter two but this recipe is a favorite. I usually make and gift them around Christmas time and they have never been turned down once. Watch out, these are yummy. This recipe is easy enough that you can totally tweak and make it your own. Add more peanut butter, or more of this or that. Make it your own! Here we go.

Peanut Butter Buckeye Ball Recipe

15 min., chill then 30 min.

Ingredients

  • 2 sticks salted butter, softened
  • 2 cups Jiff smooth peanut butter
  • 1 1/2 lb (5 cups) powdered white sugar, may need up to 1/2 cup more
  • 1/2 tsp vanilla extract
  • Semi-sweet chocolate chips, for dipping + 1 tsp canola oil

Directions

  1. In a mixer bowl combine the butter and peanut butter, whip for about 2-3 min until light and fluffy.
  2. Then add powder sugar, by the 1/2 cup. Add this slowly and mix in spurts so the sugar doesn’t fly everywhere.
  3. After mixed, then use cookie scooper and scoop out cookies and place on Silpat lined baking pan.
  4. At this point dough may be too soft to shape, place in freezer for about 10 min.
  5. Roll buckeye balls between your hands to form a round cookie.
  6. Now place cookie back onto pan and repeat step 5 for all cookies.
  7. Place baking sheet in freezer for about 30 min.
  8. 10 min before the cookies come out of freezer, melt the chocolate in a double boiler over medium-high heat on the stove. Stir occasionally, chocolate can melt fast over the stove and burnt chocolate doesn’t work so keep an eye on it.
  9. Once buckeye balls are firm enough that you can pierce with a wooden skewer and it does not fall out, then you’re ready for step 10.
  10. Finally remove cookies from freezer, and one by one dip them about half way in the chocolate mixture.
  11. Then place back onto baking sheet and place back in fridge or freezer for about 10 min until chocolate is firm.

Store in the fridge covered, or in a metal tin lined with parchment paper for optimum freshness.

Serving cookies:

Serve straight out of the fridge. Because of the butter in this recipe, the cookies should be kept in the fridge. Their amazing served with a hot cup of coffee or tea. Enjoy!

Can I use vegan butter?

Yes, you can! The texture should be the same, however you may need to add less or more powdered sugar.

Can I use 100% pure dark chocolate for dipping?

Yes! The chocolate percentage isn’t relevant in this recipe. Choose whichever chocolate you prefer, milk, semi-sweet or dark.

How long do they last?

The buckeyes last for almost 1 month stored in a tin, in the fridge. However if you’d like to have them last longer then do not dip the buckeyes in chocolate. Roll, form and freeze. Then dip later.
